Equipment

  • Waffle maker

Ingredients

  • 1 cup almond flour
  • 1/3 cup ground flaxseed
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 3 tbsp butter melted and cooled - preferably organic grass fed, or sub coconut oil
  • 1 tsp vanilla extract
  • 1/3 cup cup golden monk fruit sugar or sweetener of choice
  • 1/2 cup almond milk vanilla, unsweetened

Instructions

  • Preheat your waffle maker to a medium setting
  • In a large mixing bowl combine the almond flour, ground flaxseed, baking powder, monk fruit sweetener and salt. Whisk to combine then make a well in the center of the dry ingredients and add the two eggs, vanilla extract and almond milk, mix well.
  • When your waffle maker comes to temperature, spray it with coconut oil spray or grease with butter. Pour your waffle batter in and close to cook, approx. 5-7 mins
  • Use tongs to carefully remove the waffles and serve. These go well either with a light sprinkling of sugar and berries for a savory sweet breakfast or with eggs and veggies as your "toast."
  • These waffles are even better toasted the next day which will make them even more crispy, making these an excellent meal prep breakfast.
