
Putting things in your waffle maker seems to be all the rage these days, think ..protein bars, cinnamon rolls, hash browns etc. Truth be told, these all come out pretty amazing with those little square presses in them and the cook time and clean up is pretty sweet. It did get me thinking though that maybe I could make some waffles that wouldn’t be the white flour, sugar laden syrup vehicles of my childhood (Ahem…leggo my eggo) if you please.
These waffles have a nutty flavor from the almond flour and flax seed with just a hint of sweetness from the monk fruit. I also feel good about giving my kids these with some natural maple syrup on top before school in the morning. We’ve been trying to do specific days of the week for breakfasts in our house especially over quarantine for some kind of routine and stability. A few mornings they expect smoothies, some days are for eggs, and Wednesdays are for waffles.

Sprinkling a touch of powdered sugar on these makes them kid approved, while mom likes to eat them with a schmear of peanut butter and some bananas and berries. Whichever way you enjoy them, you’ll be full for hours and starting your day off with some filling fiber and protein.
Savory Weekday Waffles

- Waffle maker
Materials
- 1 cup almond flour
- 1/3 cup ground flaxseed
- 1 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 3 tbsp butter melted and cooled – preferably organic grass fed, or sub coconut oil
- 1 tsp vanilla extract
- 1/3 cup cup golden monk fruit sugar or sweetener of choice
- 1/2 cup almond milk vanilla, unsweetened
Instructions
- Preheat your waffle maker to a medium setting
- In a large mixing bowl combine the almond flour, ground flaxseed, baking powder, monk fruit sweetener and salt. Whisk to combine then make a well in the center of the dry ingredients and add the two eggs, vanilla extract and almond milk, mix well.
- When your waffle maker comes to temperature, spray it with coconut oil spray or grease with butter. Pour your waffle batter in and close to cook, approx. 5-7 mins
- Use tongs to carefully remove the waffles and serve. These go well either with a light sprinkling of sugar and berries for a savory sweet breakfast or with eggs and veggies as your "toast."
- These waffles are even better toasted the next day which will make them even more crispy, making these an excellent meal prep breakfast.
